1.Butter chicken recipe 

How to prepare butter chicken at home?
Butter Chicken is one of the most popular chicken recipes in India. The preparation time is around 15 mins and the cooking time is just 30 mins. 


How to marinate chicken?

  • Boneless Chicken - 300 gms
  • Pound Ginger & Garlic - 1 tsp
  • Yogurt - 2 tsp
  • Lemon juice - 1 tbsp
  • Kashmiri Chili Powder - 1 tsp
  • Garam Masala - 1/2 tsp
  • Salt - 1/2 tsp
  • Oil - 1 tbsp

How to prepare butter chicken masala paste?

  • Butter - required
  • Oil - 1 tbsp
  • Onion - 2  nos. (chopped)
  • Pound Ginger & Garlic - 1 tsp
  • Tomato - 3 nos. (chopped)
  • Kashmiri Red Chili -
  • Salt - 1 tsp
  • Cumin Powder - 1 tsp
  • Coriander Powder - 1/2 tsp
  • Garam Masala - 1 tsp
  • Cashew paste. 
  • Fresh Cream 
  • Kasuri Methi 
  • Coriander Leaves 

Method of Preparation

  1. Take a bowl, add the boneless chicken pieces, pound ginger garlic, yogurt, lemon juice, red chili powder, garam masala, and salt
  2. Mix everything well, and marinate the chicken for about 30 minutes 
  3. Heat a saucepan and add oil, fry the marinated chicken pieces mixture till they are cooked, and keep it aside
  4. In a pan heat oil and butter, add onions, and saute them till they are transparent.
  5. Add the pound of ginger garlic and mix it well. Then add tomatoes saute them. 
  6. Add Kashmiri red chilies and saute.
  7. Add salt, cumin powder, coriander powder, garam masala powder. Add some water and cook till the tomatoes are mushy. 
  8. Then add cashew nuts and saute for 5 mins. Cooldown the cooked masala and grind it to a fine paste by adding water.
  9. Heat the saucepan, keep the flame low now add butter, red chili powder then add the ground puree to the pan. Give a quick mix and add required water.
  10. Add the fried chicken pieces and mix it well. Add fresh cream, mix it and simmer the gravy for about 10 minutes by closing it with a lid.
  11. Garnishing, add crushed kasuri methi and coriander leaves and mix well
  12. Serve the Butter Chicken hot with naan, chapati, parotta, roti, or pulao.


2. Chettinad pepper chicken Recipe

This comes under the chicken chettinad recipe, it’s called Pepper chicken dry or pepper chicken masala. One of the best side dishes for rice, chapati, and parotta.


To make the masala powder

  • Coriander Seeds - 2 Tbsp
  • Cumin Seeds - 1 Tsp
  • Fennel Seeds - 1 Tsp 
  • Peppercorns - 3 Tbsp 
  • Red Chilli - 2 Nos

For Chettinad Pepper Chicken

  • Chicken - 1 Kg
  • Oil - required
  • Whole Spices(Clove, Cardamom & Cinnamon)
  • Onion - 4 Chopped
  • Pound Ginger & Garlic - 2 Tsp
  • Tomato - 3 Chopped 
  • Turmeric Powder 
  • Chettinad Masala Powder - 5 Tsp
  • Curry Leaves
  • Salt as required

Method of Preparation 

How to prepare Chettinad Masala Powder?

Heat a saucepan and add coriander seeds, cumin seeds, fennel seeds, peppercorns and red chillies. Dry roast them for 3 mins or until you get a nice aroma. Cool the spices and grind them into fine powder. Keep it aside

How to prepare Pepper Chicken recipe?

Add oil to a saucepan and add whole spices, then add onions. Saute until they are brown. Add pound ginger and garlic. Saute for a few mins. Add the tomatoes and saute well. Once the tomato is cooked add the turmeric powder and salt. Now add the hero of the recipe, add the chicken pieces and give a quick mix then cover and cook for 15 mins. Now add the ground masala mix. Cook until the moisture evaporates. Add a few curry leaves and cook for another 10 mins. Chettinad pepper chicken masala is ready to serve hot.

3. Chicken Fry Recipe

Chicken fry is the best starter to be served. Everyone loves chicken fry as it’s crispy outside and juicy inside. Here we go for a chicken fry in restaurant style. Hope you all enjoy it.

  • Yogurt - 2 Tsp
  • Turmeric Powder - 1/4 Tsp
  • Cumin Powder - 1 Tsp
  • Coriander Powder - 1 Tsp
  • Chaat Masala - required
  • Garam Masala - 1 Tsp
  • Red Chili Powder - 2 Tsp
  • Corn Flour - 1 Tbsp
  • Besan Flour - 2 Tbsp
  • Oil 
  • Onion -1 
  • Garlic Cloves - 6
  • Ginger 
  • Green Chili - 1 No.

Method of Preparation

To marinate the chicken blend onion, garlic, ginger, to smooth paste and keep it aside. Make slits in the Chicken, so that the masalas go deeper into the chicken, add salt, lemon juice, curd, coriander powder, ginger-garlic-onion paste, cumin powder, chaat masala, garam masala, red chili powder, besan flour, cornflour. Mix well and marinate the chicken pieces with the masala for about 30 mins. Heat oil for deep-frying and fry the chicken pieces in medium-low flame and,

Take the chicken pieces out and let them rest completely. Close with a lid and leave it. Once the chicken pieces come to room temperature, heat the oil again. Fry the rested chicken pieces again on high flame for about 30 secs. Serve the chicken pieces hot as a starter or as a side dish.
